Hop and Skip - Mint, Cumin & Tarragon
Capturing the exuberance of life, 'Hop and Skip' is not for the faint hearted. And this should not surprise when you reason that it features mint, named after the Ancient Greek nymph Minthe, who had the misfortune to be ground underfoot by goddess Persephone after husband Hades took a fancy to her. Mint needs strong companions, which is why it is paired with tarragon and cumin with a little black pepper thrown in for good measure.
Standard directions - Mix 1 tablespoon of 'Hop and Skip' with a cup of plain yoghurt. Chill for at least an hour in the fridge before serving. NOTE: delicious with Greek Style yoghurt.
Serving suggestions - this 'Greek Style' dip goes well with pita breads, vege sticks (carrots, celery etc), meatballs and on a falafel.
Use in cooking - use as a lamb rub or add to casseroles for instant flavour.
